WHAT'S IN OUR PICNIC BASKET?

Cruising Connecticut recipes were chosen based on their versatility, great taste, ease of preparation and ingredients. The final test was how transportable each recipe is, based on the accessibility of the picnic facilities.

What's in our Picnic Basket?

Several recipes were contributed from chefs and other area professionals. The remaining recipes came from my own picnic recipe collection or from the files of relatives and friends; in some cases they were created especially for Cruising Connecticut. 

All recipes—from beverages, breads, finger foods, and sides, to sandwiches, soup, salads, entrees and desserts, are accompanied by additional menu items designed for each distinctive picnic.

This is one of my all-time favorite main dish picnic recipes. It is simple to prepare, uses basic ingredients and travels well.

Glastonbury Gourmet's Chicken Caprese

    

Note: I have timed this recipe to come out of the oven right before leaving for my picnic. Wrap well including layers of newspaper to hold in the heat and eat within 2 hours. Other times, I make ahead and refrigerate. It is delicious either hot or cold. In either case, if convenient keep the tomatos, cheese and glaze separate and assemble right before eating.
